Only after being carefully chosen and trimmed by our expert artisans are the finest hams massaged with a single ingredient: sea salt.

CELLAR SCENT SINCE 1905

It is right here that the magic happens. Our cellar, carved out with pickaxes and lined with stone walls, is a truly sensory experience. Thanks to its unrepeatable microclimatic conditions, our “ruffino”, a little mite, helps give the ham a uniquely rich bouquet of aromas. The hams age on fir-wood racks, passing on their fragrances to the prosciutto that will follow.
